Saboroso Filé de Salmão Grelhado

Ingredientes: 1 quilo de postas de salmão; 100 ml de azeite de oliva; suco de 1 limão; sal e pimenta-do-reino a gosto; alho frito a gosto. Preparo: Tempere o peixe com o suco de limão, sal e pimenta. Deixe marinar durante 30 minutos. Aqueça uma frigideira antiaderente. Coloque um fio de azeite. Doure as postas de salmão de ambos os lados. Acrescente mais azeite caso a frigideira estiver muito seca. Reserve em prato aquecido. Na hora de servir, salpique com alho frito e pimenta e grãos (opcional). Variação: Prepare molho com 300 gramas de mel e 300 gramas de mostarda. Misture os dois ingredientes e leve ao fogo numa panela pequena. Depois que levantar fervura, cozinhe em fogo baixo por mais 2 ou 3 minutos. Lembre-se de que quanto mais ferver, mais espesso ficará o molho. Sirva como acompanhamento do salmão e de legumes também grelhados. Dica: Se preferir, grelhe o peixe sem o azeite.

Pão Recheado com Azeitonas

Ingredientes: Massa: 500 gramas de farinha de trigo; 250 ml de leite; 125 ml de óleo; 1 tablete (15 gramas) de fermento biológico fresco para pão; 1 colher (sopa) de açúcar; 1 pitada de sal; 1 gema para pincelar. Recheio: Peito de peru fatiado a gosto; azeitonas preta e verde fatiadas a gosto; queijo tipo Muçarela fatiado a gosto. Preparo: Numa vasilha, esmigalhe o fermento e junte o açúcar. Aguarde alguns minutos e amasse o fermento com um garfo até dissolver completamente – fica líquido. Adicione o leite morno, o óleo e o sal. Misture bem com um batedor ou garfo, até obter mistura homogênea. Adicione parte da farinha de trigo e misture bem. Numa superfície limpa, vá sovando a massa e adicionando o restante da farinha. Sove até obter massa lisa e homogênea que não grude nas mãos. Faça uma bola com a massa e coloque novamente na vasilha enfarinhada. Cubra com um pano e deixe descansar o por aproximadamente 30 minutos, ou até dobrar de volume. Numa superfície enfarinhada, abra a massa com um rolo, em forma retangular. Passe um pouquinho de farinha sobre a massa aberta e coloque as fatias de peito de peru, de queijo e as azeitonas fatiadas, deixando uma borda de 2 cm sem recheio para que o mesmo não vaze na hora de enrolar. Enrole como rocambole e dobre as pontas da massa para não vazar. Acomode o rolo de massa numa assadeira untada e enfarinhada tomando o cuidado de manter a aba do fechamento do lado de baixo do pão para que o mesmo não abra quando assar. Pincele a massa com gema de ovo. Leve a assadeira ao forno desligado e deixe descansar novamente por mais 30 minutos. Depois desse tempo, asse em forno (210º) durante 30 minutos, ou até ficar dourado. Espere amornar para servir. Também pode ser preparado com antecedência. Dica: O recheio pode ser variado a gosto.

Torta de Frango

Ingredientes da Massa: 3/4 xícara de manteiga ou margarina gelada; 2 xícaras de farinha de trigo; 5 a 6 colheres (sopa) de água gelada. Para o Molho Branco e Recheio: 2 colheres (sopa) de manteiga ou margarina; 2 colheres (sopa) de farinha de trigo; 1 pitada de sal; 1 xícara de leite; 1 lata de ervilhas escorridas; 2 xícaras de frango cozido e desfiado; queijo tipo Parmesão ralado; 1 colher (chá) de mostarda; 1 colher (chá) de molho inglês. Prepare a Massa: Corte a manteiga ou margarina gelada em pedacinhos e junte a farinha, amassando com a ponta dos dedos ou misturando com 2 facas até obter uma farofa. Acrescente a água, 1 colher de cada vez, misturando rapidamente com um garfo. Sove 3 a 4 vezes só para formar uma bola, sem se preocupar em obter uma massa lisa e uniforme. Coloque num saquinho plástico e leve à geladeira por uma hora. Depois, numa superfície polvilhada com farinha de trigo e com um rolo de macarrão, abra a massa numa espessura fina. Forre o fundo e os lados de uma fôrma refratária. Leve ao forno em temperatura moderada e asse até dourar ligeiramente. Enquanto a massa assa, prepare o molho branco e o recheio: derreta a manteiga ou margarina sobre o fogo lento. Junte a farinha de trigo, o sal, o leite, tudo de uma só vez, mexendo sempre. Junte as ervilhas e o frango desfiado; acrescente a mostarda e o molho inglês. Cozinhe, sem parar de mexer, até que a mistura engrosse e borbulhe. Coloque na massa assada e salpique com o queijo parmesão. Leve ao forno pré-aquecido até dourar. Dicas: Com as sobras da massa, faça uma rede sobre o recheio. Leve ao forno até dourar a grade da massa. Prefira usar a carne do peito do frango e cozinhe em água bem temperada, descartando a pele. O recheio também pode ser preparado com carne moída ou peixe.

Pão de Mandioquinha

Ingredientes: 5 ovos; 500 gramas de mandioquinha; 100 gramas de fermento Fleischmann (ou similar); 1 xícara (chá) de açúcar; 1 xícara (chá) de óleo; 2 colheres (chá) de sal; aproximadamente 1 quilo de farinha de trigo. Preparo: Lave bem a mandioquinha e cozinhe. Bata no liquidificador, os ovos, o fermento, o açúcar, o óleo e a mandioquinha escorrida e ainda quente. Ponha a farinha numa tigela (reserve 1 xícara para ir juntando no fim) e junte a mistura do liquidificador. Mexa bem até obter uma massa lisa e leve. Coloque a massa em fôrmas de pão untadas e enfarinhadas. pincele com gema, cubra e deixe descansar até que tenha crescido. Faça o teste da bolinha de massa no copo de água: quando a bolinha subir, espere mais 10 minutos e, então leve os pães ao forno previamente aquecido (180°) por cerca de 30 minutos, ou até que fique dourado.
