Cookie de Chocolate Amargo

Ingredientes: 2 ovos inteiros; 185 gramas de farinha de amêndoas; 140 gramas  de chocolate 70%, em cubos; 100 gramas de açúcar mascavo; 1 colher (chá) de essência de baunilha;  80 ml de azeite de oliva, ½ colher (chá) de bicarbonato de sódio. Preparo: Bater o açúcar com o azeite de oliva, acrescentar os ovos, a baunilha, a farinha de amêndoas, o bicarbonato; Desligue a batedeira e junte o chocolate picado misturando com uma colher. Deixe a massa descansando no freezer durante 1 hora. Passado este tempo, coloque colheradas da massa numa assadeira forrada com papel manteiga. Leve ao forno preaquecido (180º) e asse durante 13 minutos. Dica: Ao colocar a massa na assadeira, deixe espaço entre um e outro porque crescem durante o processo de cozimento. Espere esfriar completamente antes de retirar os ookies da assadeira.
