Ingredientes: 1 frango grande, partido em pedaços: 2 tomates sem sementes cortados em cubinhos; 1 cebola grande picadinha; 1/2 pimentão cortado em pedaços; 1 pimenta vermelha sem sementes e picada; 2 tabletes de caldo de galinha; 1 maço de coentro picado; 1 colher (sobremesa) de azeite; 1 colher (sopa) de colorau; 1 colher (sobremesa) de cominho; 2 colheres (sopa) de extrato de tomate; 1 colher (sopa) de vinagre; 1 colher (chá) de açafrão; suco de 1 limão médio. Preparo: Lave bem os pedaços de frango em água corrente. Em seguida deixe de molho no suco de limão por aproximadamente 5 minutos. Lave bem para tirar o suco totalmente. Numa panela, aqueça o azeite e adicione os pedaços de frango. Junte os demais ingredientes e, mexendo sempre para não grudar no fundo da panela, refogue a carne no caldo que se forma naturalmente. Cozinhe durante 30 minutos, sempre em fogo baixo. Se precisar, coloque mais água quente, aos poucos. No final, a carne deverá estar cozida e com molho reduzido. Variação: Se preferir, ao final do cozimento, adicione azeitonas pretas, cogumelos ou palmito picados. Substitua o coentro por cheiro verde picado. Substitua o frango por galinha.
