Estenda a massa, fure com um garfo e pincele com água toda borda da massa. Coloque o recheio e enrole cuidadosamente, fechando o rolo. Coloque o rolo numa assadeira, pincele com a gema e leve ao forno preaquecido (180º) e asse durante 40 minutos, ou até que fique dourado. Retire do forno. Espere esfriar um pouco e coloque o rolo no prato de servir. Decore com fatias de maçãs assadas e açúcar de confeiteiro. Variação: (1) Substitua as amêndoas e as nozes por castanha do Pará ou outra castanha de sua preferência. (2) Decore apenas com açúcar de confeiteiro.
